Neil; Head Chef

Neil brings all of the flavours together on the plate for you to enjoy and remember fondly. He has a love of many things including gardening and tending to his Bonsai.  Neil is so much more than a chef – he is a designer.

  • more about Neil

What do you like most about your job?
I’ve always loved design, sculpture, architecture and cooking. Being a chef can be more than cooking, because cooking is a process. It’s not always what you do but how you do it, and can I make it better. They say you eat with your eyes, and this couldn’t be more from the truth with all the cooking programs available to watch.

What is the most enjoyable part of your job?
Designing dishes through a design perspective is fundamentally essential. We need to look at colour, flavour, texture, shape, different methods, and incorporating seasonal produce to build or sculpt a dish on a plate which is small, but never less can emote an emotional response from the customer. You need to create this emotive positive response to build positive memories.

Being a part of Yarra Valley Estate, what better venue to create these feelings!  Whether you’re having your wedding or conferencing here. I want to give our guests a food memory that is an emotionally positive experience for them to remember.

Working with an experienced team from the office to the garden, it’s a pleasure coming to work each day.

    Describe yourself in 3 words?
    Beer + Brewing
    Fishing + Boating
    Cooking + Dad

If you weren’t doing this job, what would you be?
If I’m not at work, you’ll probably find me fishing somewhere out in Port Philip bay. People always ask, what’s your favourite dish. Well I don’t have just one. I do love eating game, especially Duck or Scwab (that’s a pigeon if you’re not sure). And those who think that chefs don’t like to cook at home might be true, but not for me. I love cooking. And brewing beer…
