Christmas is a time when families and friends traditionally get together in large numbers and all try to cater for one another.  But these days in a group it’s not uncommon to find a vegetarian, vegan, pescatarian, lactose intolerant, gluten free or egg-allergic member at the table, or just Aunty Doris who has decided to give up sugar this week!

So how do you go about catering for all these requirements?   Our Executive Chef deals with dietary requirements daily, so we asked him to suggest some tips on how to survive Christmas with dietary requirements!

Christmas stuffing

What would a traditional Christmas turkey be without a great stuffing?  And yet, for people who need to eat gluten free, trimmings like stuffing at Christmas are often made with gluten.  The good news is, rice flour and maize stuffings are available, or you can make your own, and are now so well made that the rest of the party wouldn’t know they weren’t eating bread based stuffing mix.

Onion and garlic are the basis of a tasty stuffing mix, but they are also packed full of fructose.  But no-one wants to forego the great flavours they provide, especially in stuffing.  Fortunately you don’t have to; try a pinch of asafoetida powder which is an Indian spice, and a great alternative to garlic and onion and ‘fructose friendly’!

For added flavour, use the green parts of chives and leeks (as opposed to the white) as they are easier on the stomach.

Ham

Ham is a must-have on many tables at Christmas, but if you’re looking for a delicious gluten-free version, there are plenty of options that keep the flavour without the gluten. Try this gluten-free ham recipe from Gluten-Free Palate. It’s a classic glazed ham with a hint of sweetness and a crispy outer layer—perfect for satisfying everyone at the table while accommodating gluten-free guests.

Desserts

There are some gorgeous gluten free desserts to try out, such as Raw Christmas pudding cake pops or spicy chocolate truffles.

To avoid the fructose in fruit, rather than a plum pudding you could opt for a self-saucing chocolate pudding. Or simply replace pudding with a great cheese platter. Every cloud has a silver lining!

Transforming the Edible Forest from a barren paddock into a thriving ecosystem was no easy task. With dedication, hard work, and plenty of natural compost, we turned clay soil into fertile ground. Our horticulturist, Jamie Sweetman, plays a pivotal role in maintaining the Edible Forest. With the warmer weather approaching we are all keen to get out into our gardens and soak up the sun, although don’t be too tempted to head down to the nurseries just yet to plant your much anticipated Tomatoes as, unfortunately, I don’t think we have seen the last of the frosts in Victoria. Be patient, the time will come and we will all be out enjoying the planting season.

Traditions in Tomato Planting

We have all heard some of the ‘rules’ on when to get your hands dirty and plant the Tomatoes seedlings. Some families have traditions passed down through the generations which stipulate that Tomato planting is on Melbourne Cup Day (wearing fascinators to match their gardening gloves of course!) others make a day of it adding a BBQ family feast at the end of the day. When do you plant your Tomatoes? Do you have any traditions that you love to embrace?

At Yarra Valley Estate, within a mixed variety of Tomatoes, we are excited to be planting some ‘Purple Russian’ & ‘Black Krim’ varieties this year. The seedlings are growing tall and strong in our hothouse and we  know these will add colour to our dishes, evoking discussion around our organically grown fruits with our guests.       At YVE we also have ‘San Marzano’ seedlings, a Roma Tomato which is perfect for preserving as their skins come of easily, they are not known for being loaded with seeds although are bursting with robust flavour. We plan to plant, pick & preserve these little beauties!

When planting time does come around, be sure to use ‘companion planting’ which has beneficial effects on one another (we are trying to confuse the pests here too!), so plant your Tomato seedlings alongside Basil, Carrots, Peppers, Marigolds & Nasturtiums … all of which are perfect in a summer salad.

A few planning tips:

• Plan your layout to combine with companion plants
• Tomatoes love heat – warmer soil will mean earlier ripening fruit
• Bury them deep, don’t worry – they will grow towards the light
• To stake or not to stake? If you are not planning on staking your tomatoes, that’s ok – last season we left some of ours ramble abundantly on the beds in the Edible Forest and they flourished!

Flowers have several benefits including increasing psychological state of mind, boosting energy levels and improving air quality.  They also have a positive benefit within the workplace, enhancing cognitive performance, productivity, creativity and problem solving.

We are often distracted with the day to day grind, life is always so busy and many of us find ourselves wondering where did the year go!  The daffodil can remind us to be present in the moment, take some time to enjoy the simple pleasures in life.

Daffodils are so easy to grow! Pop some bulbs in the ground in autumn, and you’re done.  They will ‘pop up’ year after year to delight you, plant all over the your garden and even around grasses bases of trees.

Planting guidelines;

• Suited to cooler climates, Victoria provides perfect conditions
• Daffodils like full-sun or part-shade
• They can either be planted in pots or throughout the garden
• Plant depth is around 12cm and spacing between 10–15cm apart
• Flowers bloom from mid winter well into spring

On Monday night (16th November), the RACV Victorian Tourism Awards were announced at the industry’s ‘night of nights’, the annual Gala Ceremony at the Melbourne Convention and Exhibition Centre, where around 1000 people from across the state gathered to hear the announcements.

Yarra Valley Estate entered 2 categories, ‘Business Event Venues’ and ‘Qantas Award for Excellence in Sustainable Tourism’. Submissions had been sent, judges had visited the site to review the documentation and the atmosphere at the gala was electric!

Louise Ward, owner of Yarra Valley Estate proudly accepted the Gold Winner trophies for both entries! “I can’t believe it, I never hoped nor dreamed that we would receive not 1 but 2 beautiful trophies. These recognise our ongoing commitment to customer service and sustainability” Louise said. “It goes to show that a small business with a dedicated and loyal team can be recognised, it’s very encouraging.”

For over 30 years the Victorian Tourism Awards have showcased and recognised the state’s leaders in tourism excellence. The Awards encourage businesses to meet and strive to exceed industry standards. The awards play an integral role in rewarding business excellence, innovation, industry professionalism, collaboration and initiative.

In 2015, the tradition to recognise excellence continued, with over 100 entries submitted across 32 categories. By entering the program, businesses and individuals show strong commitment to the pursuit of tourism excellence.

Yarra Valley Estate would also like to congratulate another Yarra Valley winner ‘Global Ballooning’ who took out the Gold trophy for best ‘Tour & Transport Operator’, a hotly contested category. Also based in Dixons Creek, Kiff Saunders, Director & chief pilot of Global Balloon was there on the night to celebrate their success.

This is a year has been a year of awards for Yarra Valley Estate who have also been awarded the UNAA Sustainability Award for Small-Medium business’ in June and the Victorian Premiers Sustainability Award a few weeks ago.

Our current projects include building a 1 acre Edible Forest which will supply our kitchen with the freshest of ingredients to serve to our guests. We will also be conducting educational edible tours of the property.

Yarra Valley Estate wins Premier’s Sustainability Award

Yarra Valley Estate, a conference, wedding and accommodation facility in rural Victoria, has won the Small and Medium Enterprises category in this year’s Premier’s Sustainability Awards for the certified programs it runs across energy, waste, water and community development.

Formerly a deer park stripped bare of all its trees and shrubs, the 120 acre Yarra Valley Estate is a conference, wedding and accommodation centre that has been nurtured and rehabilitated into a lush forest with organic vegetable gardens and private wildlife rehabilitation centre, Babbajin Park.

To ensure continual improvement, Yarra Valley Estate has measured its footprint and benchmarked operations locally and globally through EarthCheck, the travel and tourism environmental management and certification program and have seen minimised footprint over time.

Yarra Valley Estate have formalised policies and procedures to offset the business to carbon neutral and also they contribute 11 percent of net revenue to community programs.

Sustainability Victoria CEO, Stan Krpan says the Awards Ceremony is a special night, rewarding and recognising Victorians who have made a difference to the environment by implementing sustainable measures to better manage their waste, water and energy consumption.  “Congratulations to all of this year’s finalists and winners. These projects continue to deliver economic, environmental and social benefits, as well as inspire more organisations to think about their own sustainability efforts,” Mr Krpan said.

Yarra Valley Estate would also like to congratulate the community group ‘St Kilda Mums, Geelong Mums and Eureka Mums’ who won the top honour of the night – the Premier’s Recognition Award – for its program recycling, reusing and re-homing of babies and children’s gear, sharing the joy of parenthood and saving the earth’s precious resources.

What is carbon neutrality?

Carbon neutral, also called carbon neutrality is a term used to describe the action of organizations, businesses and individuals taking action to remove as much carbon dioxide from the atmosphere as each put in to it. The overall goal of carbon neutrality is to achieve a zero carbon footprint. For example, a business may plant trees in different places around the world to offset the electricity the business uses. This practice is often calledcarbon offset or offsetting

Having applied best-practice measures and accurately measured its carbon footprint, in 2014/2015 YVE provided substantial data to Carbon Neutral to ensure a specific total would be aligned, allowing for carbon offsets to become a certified Carbon Neutral business. Carbon Neutral helps organisations across Australia and beyond, minimise their impact on the environment by working with them to measure, reduce and offset greenhouse gas emissions. YVE are proud that their 2014/15 operations were carbon neutral.

She is working closely with Moira Kelly AO as a board member of Global Gardens of Peace – an apolitical, non-­religious Australian charity founded by Moira that builds gardens of hope for children and their families who have suffered as a result of war and natural disasters.

Global Gardens of Peace, believe that it is the natural birthright of   children around the world to express themselves, explore and play safe, in   a peaceful nature based environment.

Louise and the GGOP board made a recent trip to Gaza to see the progress of this amazing initiative and also meet some of the key players on the ground in Gaza and, of course, the people who live there. When we asked Louise what were 3 highlights of her trip she very enthusiastically said:

• The people of Gaza – who despite living under very tough circumstances always remained optimistic about the future and passionate to see this project come to reality and make a difference to lives of  children and families.

• Hearing from the Palestinian Prime Minister  Dr Rami Hamdallah that Global Gardens of Peace is a NUMBER ONE Priority for the people of GAZA, and
• The excitement at seeing the land and planting the first tree. To quote Louise, “it was very moving and inspirational to see the beginning of something transformational coming to fruition before our eyes”

This award was designed to reward organisations demonstrating outstanding leadership in adopting practices that position environmental and social performance as priority areas of corporate responsibility and performance alongside financial results. It acknowledges those organisations that understand their broader societal responsibilities and their potential influence within the community to foster sustainability, as well as within their supply chains.

“The judges were impressed by the commitment of Yarra Valley Estate to sustainability.  They have taken a holistic approach and have achieved in terms of – natural habitat and wildlife protection, growing their own vegetables, sourcing produce and staff locally, use of non-hazardous chemicals, water independence, and aspiring to carbon neutrality. They have also used clever ways to engage their customers in helping to minimise their footprint such as the use of innovative switch off lights signs.  The judges were especially impressed by their commitment to social sustainability, where it donates 11% of net revenue to community programs, including supporting projects in remote communities in PNG. ”

Social Sustainability is equally as crucial to Yarra Valley Estate as is good environmental management. Global best practice contribution to CSR is 2% of total revenue.  In Australia, the London Benchmark Group www.lbg-australia.com measures and reports the contributions of leading Australia companies.  In 2014, Australian businesses that use the LBG contributed 1% of their total revenue to the community.  In the same year, YVE contributed more than 11% of total revenue to the community – more than 10 times that of LBG members, so it’s no wonder YVE has been recognised for their commitment and leadership to sustainable business practices.

This is just the beginning for us as an organisation as we continue to reduce our carbon footprint and become the first carbon-neutral venue in the Yarra Valley.

Our organisation was set up for the children and their families in all parts of the world as a beacon of hope for better days to come and they will come. We remain determined and in fact have even more resolve to ensure that our garden of peace will take place whether it takes one year or three years in Khan Younis. This is our promise to the people of Gaza and the people of Palestine all over the world.
