At the heart of our sustainability story is the Edible Forest.
Home to more than 300 edible and medicinal plants, the forest supplies seasonal produce used throughout our catering operations while supporting biodiversity, education and sustainability awareness.
Guests can explore the forest through guided tours, discover unusual edible plants and gain a deeper understanding of regenerative growing practices. It’s a practical example of how sustainability can become part of the guest experience rather than something that happens behind the scenes.

We travelled from the UK for a family wedding. The outdoor chapel is the perfect venue for an open-air wedding. It is stylish and looks amazing in photos. The food was delicious and service from the staff was excellent.

Our kitchen team prepares meals using seasonal ingredients sourced locally where possible, including produce grown within the Edible Forest. We prioritise fresh preparation, sustainable sourcing practices and waste reduction throughout our catering operations.
Food scraps are diverted to our on-site worm farm, helping create a circular approach to food production and waste management.

Welcome to Country ceremonies and cultural engagement opportunities can be arranged with respected Traditional Owner representatives, including the Hunter Brothers and Aunty Dot. We also support local suppliers and producers throughout the event experience wherever possible.
